How to Make Easy Gluten-Free Crepes (with just one ingredient!)

I’m going to introduce you today to one of my favorite gluten-free treats.

Not only can this be a lovely dessert, it can also be delicious, savory meal.

I’m talking about Brazilian Tapioca Crepes, known in Brazil as just “Tapiocas”.

Are they really that easy to make, you might ask?

Yes!

They are made with only one (!) ingredient – hydrated tapioca flour.

And then, you fill them with whatever your imagination comes up with. My personal favorite is creamy goat cheese topped with fruit preserves 😍

Now you may be asking, why is eating gluten-free important?

Great question!

The fact is, many of us are sensitive to the modern, genetically modified version of wheat.

In the U.S. we have a version of wheat called American Dwarf Wheat. This is a highly genetically modified wheat with abnormally high levels of gluten. This is not the wheat that our ancestors would have eaten!

Additionally, most wheat in the US is treated with an inflammatory pesticide called Roundup. So even if you are not sensitive to the wheat itself, you likely will be to the pesticide used to treat it. Gluten is inflammatory to so many of us and it’s well worth it to limit this in your diet, or even to try cutting it out completely for a little while to see how you feel.
